Ginger Rosemary Pommosa


At dinner with the Hubs on Valentine’s weekend I had a twist on the Moscow Mule…rosemary infused vodka, cherry hearing, lime and ginger beer. That got me thinking. I love champagne and there’s nothing better than a mimosa with some biscuits and gravy and a side of eggs on a Sunday morning. But what about Sunday evening for a girls night and the Academy Awards? I set out to recreate the traditional mimosa using champagne, ginger, lime, rosemary and instead of cherry, pomegranate juice. Perfect for a Academy Awards party!



~Ingredients~

1 cup pomegranate juice

2 tablespoons lime juice

2 tablespoons fresh ginger thinly sliced

Champagne

Fresh rosemary sprigs, for garnish

~Instructions~

In a saucepan, combine the pomegranate juice, lime juice and ginger and bring to a boil, then simmer for 5 – 10 minutes. Place in a covered container and let cool in the refrigerator.

Pour champagne into two glasses, add a splash of the ginger infused pomegranate mixture and garnish with a sprig of rosemary.



It’s refreshing and a nice change from a traditional mimosa! Cheers!
