Peach Crostini is one of my favorites go-to summer appetizers. It’s a fresh change from a tomato crostini or bruschetta and it’s quick and easy to make. You can find several variations of this online and below is the recipe I have been using for many years. I made this twice in the past week: for a happy hour and for an outdoor concert. It’s always a hit!
Peach Proscuitto Crostini Recipe
Ingredients (serves 12)
12 slices of ciabatta bread
2 ripe peaches
12 slices prosciutto
Ricotta cheese
Honey
Black pepper
Directions
Brush the ciabatta slices with olive oil and toast under the broiler or on a grill. Thinly slice the peaches.
On each slice of bread, spread the ricotta cheese then sprinkle with black pepper. Add a slice of prosciutto and drizzle with honey. Top with 2 or 3 sliced peaches.
For the outdoor concert, I prepped the ingredients and assembled when we got to our destination so the bread didn’t get soggy.
